I have read that cats cannot digest starch, is this true?

Actually cats can digest starch very quickly and efficiently. If a cat could not digest starch, then starch would have no effect on their blood glucose. When starch is fed to a cat their blood glucose levels will rise quickly and rise significantly higher vs. feeding animal protein. This is why the first thing you must do for a diabetic cat is to remove all starch from their diet.
